I like baking and sometimes it helps me destress, but recently, I’ve been feeling the urge to bake rather frequently, even on weekdays. My requirements for a weekday baking recipe is simplicity, easy to make and easy to clean up. Preference being something that I need not break out mixer for. This cinnamon cookie recipe ticks all the boxes and tastes good. Like a snickerdoodle but with a greater cinnamon kick. It’s crisp and light on the outside but slightly chewy at the centre, lovely with a glass of cold milk.
If you’re pressed for time and do not have 2 hours to wait for the dough to harden, pop it into the freezer for half an hour and it’ll work just as well.
