The Administration by Francis Manna is one of my favourite books. The subject manner may not be to everyone’s taste, but the characterisation is incredible and I’ve read and re-read the books in the series over and over.
One of the main characters, Warrick, is fond of cooking and baking and the books are littered with descriptions of him indulging in it, together with his frame of mind when he cooks a particular dish or bakes something. Every time I come across them, I have an urge to do something similar. So I was reading about Warrick making pancakes this morning, and so I went to do the same. I love pancakes and any excuse to make some is always welcome.
I followed Jamie Oliver’s simple pancake recipe, using 1 cup self-raising flour, 1 cup milk, 1 egg and a pinch of salt. Mix everything together and heat up a non-stick pan, drop circles in the pan and cook each side till it’s golden brown. Serve plain with butter or jazz it up however you want. I had strawberries, so that went on my plate together with a dollop of butter on my pancakes. Delish and so easy to do.
